Welsh Rarebit

Ingredients

  • 4 slices of Villaggio Artesano® Sourdough Bread
  • 1 1/2 cups (350g) Aged Canadian Cheddar
  • 2 tbsp (30ml) Stout OR Milk
  • 1 tsp (5g) Mustard Powder
  • Dash Tabasco
  • 1 Tsp (5ml) Worcestershire Sauce
  • 1/4 cup (62.5g) Fresh Chives, chopped
  • 6 Cherry / Grape Tomatoes
  • 1 tbsp (15ml) Olive Oil
  • Salt & Pepper, to taste

Directions

  1. Preheat the broiler/toaster oven
  2. Over low heat, into a small pot add the cheese, stout, mustard powder, Tabasco, and Worcestershire sauce
  3. Cook and stir until the cheese has melted and all of the ingredients have been incorporated
  4. Set aside and allow to cool
  5. Run 4 slices of bread under a broiler to toast one side only
  6. Toss cherry/grape tomatoes with some olive oil
  7. Spread the rarebit over the untoasted side, spread the tomatoes in the same pan, then, brown the bread under a broiler till bubbly and toasty brown and tomatoes cook, for approximately 1-15 minutes
  8. Sprinkle with chopped chives and serve with roasted cherry tomatoes
